Sweet Recipe: Do the Cauliflower Mash!


Hi folks, I’m here with another simple, easy, healthy and delicious recipe. I’m on this whole “#SUMMER16” vibe right now. I’ve been hitting up the gym 6 days a week for the past two weeks trying to get my hibernation body into bikini body gear ASAP.

As expected I’ve cracked down on my eating and am hopping back into the healthy lifestyle saddle. Don’t get me wrong, I usually eat pretty healthy all the time, but the past month or so (packing, moving, unpacking, decorating) I let my healthy eating habits take a back seat. As a result, my back and face started breaking out (eek!) and I put on some unwanted el-bees (pounds for those who are new readers).

I’ve gotten into a pretty awesome skincare routine (post to come later on) which has cleared up my face, and am in the gym (helps to have a gym in your new building) and healthy eating groove again.

Okay, enough blabbing. On to the recipe!

What you will need

1-2 cups veggie broth

1 medium sized cauliflower head

*  2 tablespoons of butter (unsalted)

salt and pepper to taste

food processor 


Cut the cauliflower in 4’s. Don’t worry if the florets fall apart, we’re going to be pureeing it anyway.

In a large pot, bring your broth to a boil on medium heat (add a few dashes of salt if you’d like) and add your cauliflower. Cover the pot and let the cauliflower steam on low heat for 20 minutes, or until the cauliflower is tender.

Add your cauliflower (sans broth) to the food processor. Add your leftover broth and butter, and puree. I would pulse it in order to ensure you get the desired consistency.


Add a few dashes of salt and pepper and pulse a bit more.

It is that easy! There is no need for heavy cream and 15 sticks of butter. The cauliflower is so rich and flavorful that you won’t want to go back to regular yukon golds.

Now that you know the basics, spice it up: add bacon, chives and any other tasty additive for this amazingly easy side dish.
