Sweet Eats: Snack Time! | Really Simple Superfood Bites

I’ve been thinking of ways to put my new food processor to good use lately and came up with a great idea. I’ve been wanting quick and easy snacks to take with me to work and after browsing the interweb, decided to make my own skin healthy-energy packed-fiber balls. Haven’t thought of a clever name yet, but these are ah-ma-zingggg. (I wouldn’t share them with you if they weren’t).

What you will need:

-food processor

-nut butter (3-4 tbsp)

-granola (1.5 cups)

-chia seeds (2 tsp)

-goji berries (my favorite!) (1 tbsp)

-cacao nibs (1 tbsp)

Cacao Nibs: The better version of dark chocolate. It is great for magnesium which is good for muscle and nerve function. A great source of fiber (1oz has 9 grams). High in iron (1oz has 6% daily intake). It is also high in antioxidants, among many other things.

Goji Berries: Want healthy, glowing skin? Goji berries are high in beta-carotene which promotes healthy skin! It is also good for the immune system (high in vitamin C) and your eyes. They are also a good source for antioxidants and high in fiber.

Chia Seeds: we are all aware that chia seeds are high in fiber, but they are also rich in omega 3 fatty acids which reduces inflammation and lowers cholesterol levels. They too are also high in antioxidants which help fight cancer, protect the body from free radicals and fight aging!

Add  your dry ingredients to the food processor and then turn it on high for about 10 seconds.

Once it is mostly crushed up, add your nut butter and pulse a few times until it is to your desired consistency.

Use a spoon to remove from the food processor, forming little balls with your hands.

Place in the fridge so that they become a bit firm (overnight), and ENJOY!

So easy and sooooo good!
