Sweet Eats: The Mighty Macro Bowl

Every time I go to Whole Foods to do my weekly grocery shop, I love searching for new snacks to try. This week I picked up a delicious “Go Macro” macrobar. While reading the package, I noticed that along with descriptive words “vegan” and “non-GMO”, the word macrobiotic was displayed as well.

What does “macrobiotic” actually mean?

Someone who follows a macrobiotic dietary regimen eats mainly grains as a staple food (not to be confused with vegetarians or vegans who usually lead a plant based diet). Along with grains, vegetables, beans and legumes are also consumed. Pretty interesting I must say, though I cannot see myself committing to something like that (no shade to those who do it) as I LOVE seafood way too much to limit myself to having it twice or less.

Although I wont be donning my “Go Macro or Go Home” t-shirt any time soon, I am still going to incorporate macro recipes into my life as often as I can, as these recipes are great for my sensitive tummy.

After doing a bit of googling and Pinterest browsing, I came up with an easy and basic recipe to make for today’s lunch and wanted to share it with you guys!

What you will need

– butternut squash (cubed)

-kale

-black beans

-brown rice with quinoa

-Tahini dressing

Step One

Season your squash with salt and pepper and place in the oven for 45 minutes.

Step Two

Cook your rice (I use the microwavable kind) and boil your kale until the kale is soft

Step Three

Drain your beans

Step Four

Remove your squash from the oven and plate your macro bowl. You can drizzle a bit of Tahini dressing over the top, or squeeze some lemon juice.
