Sweet Eats: Pulled Beef and Lamb Tacos


Last week while grocery shopping, I bought a pack of beef and lamp tips. What recipe should I make…hmmmm, and that’s when it came to me, TACOS!

I marinated the tips for 2 days in Worcestershire sauce and steakhouse dry rub seasoning. After the tips were deeply marinated, I put them in in my crock pot and covered it up with low sodium beef stock. Let that cook on low for 9 hours. At the 6 hour mark, use two forks and shred or pull the meat apart.

Next up are the toppings. Every taco needs to have some kind of topping that is bursting with flavor. I decided to make my own guacamole (recipe here), and a mango/pineapple salsa!

This salsa is the easiest thing I think I have ever made (that required brain cells). All you need is to dice up a few slices of red onions, a full mango and half a pineapple. Add your diced ingredients to a bowl and mix together, adding dashes of salt and pepper. Once everything is mixed together, add a squeeze of fresh lime juice and Voila!


Now you have yourself a delicious and flavorful lamb and beef taco that is sure to impress your guests.
